Stewed hen in a casserole is a Jinqiangwei specialty and traditional Wuxi dish, with strict restrictions on the ingredients. It calls for a hen of about 2 kilos, raised in a bamboo grove or among tea plants. It is braised in rice wine then gently stewed in a casserole on a small charcoal stove for two and half hours to retain the original flavor of the juice.
