Xibang (Wuxi) cuisine is based on Taihu Lake products, such as fish and shrimp, and seasonal vegetables from Jiangnan. And the Wuxi Grand Hotel has wonderful banquet using Jiangnan ingredients, with nearly 20 cold and hot dishes and desserts. The shrimp have always been a must-try delicacy in Wuxi, with the sautéed Taihu Lake shrimp prepared in in a gold ingot-shape to bring out the freshness, sweetness and chewiness of the meat, with the meat separated from the crispy shell, and bathed in sauce. One bite will convince you of the sweetness of Wuxi dishes.

For many people, the mere mention of Xibang cuisine immediately calls to mind its sweetness. Some may think that Wuxi cuisine, which favors sweetness, doesn’t agree with the dietary habits of today, but this is a misunderstanding of Xibang cuisine, which actually has fewer sweet dishes than most people imagine, with sugar seldom added now, except for the braised dishes.

Xibang cuisine is a part of Huaiyang cuisine, with delicate, sophisticated cooking techniques and strict limitations on ingredients. A chef needs an apprenticeship of three years and another three years as a helper before qualifying as a Xibang chef, and many restaurants do not like to go through this time-consuming effort just to provide Xibang cuisine. But, the nostalgic banquet of the Wuxi Grand Hotel can accommodate at least 10 people per table, with many dishes on the menu to suit individual preferences.
