Eighteen traditional cultural items in Wuxi, East China's Jiangsu province, recently made the provincial intangible cultural heritage list, bringing the total number on the list to over 60.
The 18 listed items can be divided into traditional dance, painting, production or making techniques, and Chinese medicine. The production techniques related to food making take the lion's share.

The food-making techniques include Wuxi old-style noodles, Jiangyin crab roe buns, Cai Ashui mutton, gummy candies, Xushe crunchy candies, A Si bean curd sheets, Qian Family ancient wine, Wuxi downy tea, and Yixing Yangxian tea.
The making techniques of Wuxi braised spare ribs in brown sauce, Yuqi Shuangtao wine, Wuxi cuisines, Taihu Boat cuisines, Taihu Boat dim sums, fried gluten puffs, Wang Xing Ji food, Heidu wine, and Huishan shortbread, had previously been listed as provincial intangible cultural heritage items.

Among the numerous cultural heritage, the Cai Ashui mutton making techniques come from the Cai Ashui Mutton Restaurant in Meili Ancient Town and have a history of more than 70 years. Still preserving the old flavor, Cai Ashui mutton features tender texture and delicious taste.
The Qian Family ancient wine making techniques also hail from the ancient town. Based on his family's winemaking skills, Qian Jianmin, the creator of the winemaking techniques, has also learned from other traditional techniques in Jiangnan reigon to develop different winemaking procedures.
