Taicang village to launch homemade yellow rice wine

Zhuangxi, a village in Taicang, Jiangsu province, is set to launch its homemade "Xuangong" yellow rice wine after three years of planning and storage.

"Xuangong" is the trade mark registered by the village, which is taken from another popular name of Guizhuang, a renowned calligrapher and painter at the end of the Qing Dynasty (1644-1911).

The Xuangong wine is made by the village's largest winery, Zhengda, using ancient methods.

The wine makers the winery has invited come from the time-honored brand Yefulong and they all have rich experience in brewing yellow rice wine, according to Ge Yueqiang, director of Zhengda.

The production processes of yellow rice wine making include rice soaking, rice steaming, fermentation, rice squeezing, filtering, steaming the filtered wine, and sealing the wine bottles, each of which requires close attention.

The specific operations for the seemingly simple rice soaking will be varied, depending on the different kinds of rices and the weather. As for the rice steaming, if the rice is steamed too hard, it will not be used to make wine.

Although Zhengda boasts an ancient method of wine making, the winery does not say no to modern technologies to help improve its efficiency. The winery has introduced automatic squeezers to replace the original stone ones.

Besides, a set of environmental protection equipment has also been employed to help purify waste water and exhaust gas, which is a rarity among Taicang's numerous wineries and home wine making workshops.

Ge said that as Zhengda enjoys an increasingly famous reputation, the winery now is capable of consuming nearly 200 tons of rice to make 300 tons of yellow rice wine each year.

The Zhuangxi winery will welcome more businesses after the Xuangong wine is available on the market, according to Ge.

In recent years, Zhuangxi village has cultivated yellow rice wine making as its primary industry and it is now home to a dozen wineries and home wine making workshops.
