Saury: ready for foodies

How to eat

There are two main dishes: one is steamed saury, the other is Wonton stuffed with saury meat.

Steaming is the best way to maintain its original taste while the most popular dish is the Wonton stuffed with saury meat, which takes saury's freshness and tenderness to the extreme.

With all the fish meat fillings free of fishbone, one can gorge oneself fearlessly.

Preparing the fillings is really a test of cooking skill: spreading the saury over a piece of fresh pigskin before cutting off its head and tail, beating the fish with the back of a knife before removing the raised fishbone, and then mincing it up with chopped green onion and ginger.

After removing the well-cooked Wonton from the pot, sprinkling yellow shredded egg crepe and green onion leaves over it would make it look more appetizing.
